My Mother’s Day Cake
We have been slowly trying to remove most of the sugar we usually consume out of our diet. We have chosen to replace regular sugar with stevia. We haven’t baked with it yet, so for Mother’s Day, I asked for a chocolate cake using stevia. My favorite cake is the white cake, but for some reason a chocolate cake sounded yummy.
I found a recipe online and the kids went to work. MaryEllen wanted to pipe ‘Happy Mother’s Day’ on it, so we made a batch of frosting using stevia. Ugh, that didn’t come out too well, so we just made regular icing with powder sugar.
After dinner, we sat down to a cup of hot cocoa and chocolate cake. It was good, but not sweet like regular cake. Definitely will need some getting use to. We might experiment with other cake recipes. We did, however, add some frosting to it. Oh well, at least it was half the sugar! lol!
